SEE
May is the end of the spring season in Seoul. The weather is very comfortable in May as it is not as cold as spring and yet, not as hot as summer yet. This is the best time to wander around the city of Seoul and indulge yourself in how the Seoulites chill and relax on an amazing afternoon. I suggest to visit Cheonggyecheon Stream, the modern stream which run through downtown Seoul. Visitors can have a nice chat with friend, family or lover alike at both sides of the stream.
If you are looking toward something closer to the nature, how about travelling slightly outside Seoul to Garden of Morning Calm in Gapyeong? The garden is filled with a lot of beautiful flowers and green trees. It guarantees a view which is pleasing to the eyes.
STAY
If you love to shop a lot, you should definitely try staying in Myeong-dong area. I have previously stayed at Prince Hotel Seoul (twin room starts from $100) which is located just a stone-throw away from the bustling area of Myeong-dong. Exit 2 of Myeong-dong subway station will lead to the entrance of the hotel while the airport bus stop is just opposite the hotel.
If you prefer something a bit more up-scale, you may go try Sheraton Seoul D Cube City Hotel (deluxe twin room starts from $180). The hotel is adjacent to the Sindorim subway station and it is located directly above the D Cube City, a mega shopping complex in Seoul.
EAT
Kimchi lover rejoices because there are so many good food in the land of kimchi. Any eateries in Myeong-dong area will be able to serve you a Gimbap (re: a rice roll) which taste pretty good with a lot of tasty fillings like carrots, burdocks, cucumber, pickles, and meat (such as fried shrimp, fried pork, luncheon meat, etc).
Another must have dish in Korea will be its Pajeon (re: green spring onion pancake). There are a lot of different varieties for pajeon from the original one to a kimchi one. We had one amazing kimchi pajeon in Dongdaemun market.
